Guadalajara guide: La Chata serves the best flautas — ever
La Chata is an OG restaurant in Guadalajara’s Centro Historico. On most days, the line to get into this place is down the block!
They serve, with exceptional service, traditional Mexican classics.
As you enter the restaurant, you walk by the open kitchen, where women are preparing the food. They're efficient and the kitchen is immaculately clean.
The flautas are the best I've ever had. The tortilla is very thin, with freshly braised chicken inside, dressed with salsa rojo. Basically, it’s like a Mexican egg roll. The crispness of the fried tortilla emulates that of a Chinese egg roll and it works so well!
The pozole de pollo is another highlight at La Chata as well as the enchiladas. This place is well priced, and keep in mind the portions are large!
Centro Histórico is full of history, architectually significant buildings and landmarks.
The menu ranges from traditional items like Aztec Soup (tortilla soup) to more modern items like tiradito a'tun (tuna sashimi).
